Gingerbread Cake

This Recipe makes a one inch thick cake in a typical 8” X 8” or 9” round tin.  Although you can use the same recipe to make gingerbread man shapes that the kids will love.

Ingredients

200g unsalted butter

½ cup light or brown sugar

½ cup molasses

Two Eggs

1 and ½ cup flour

½ teas spoon baking soda

1 table spoon ground ginger

1 tea spoon cinnamon

¼ tea spoon ground cloves

¼ tea spoon ground allspice

2 tea spoons plain vanilla extract

½ cup butter milk

 

Method

Mix in soft butter with 1/2 cup light or dark brown sugar.  Beat until fluffy and then add ½ a cup of molasses.

Beat in two eggs.

Add the 1 ½ cups of flour, ½ teaspoon of baking soda and 1 tablespoon of ground ginger (the amount of ginger can be adjusted to taste), 1 teaspoon of cinnamon, 1/4 teaspoon ground cloves and 1/4 teaspoon of ground allspice and mix in.

Add the 2 tea spoons vanilla extract along with the ½ cup buttermilk and continue mixing till nice and smooth.

Add mixture into your greased baking tin (either 8”X8” or a 9” round).

Bake at 350 degrees Fahrenheit for 25-30 minutes and test after 25 minutes with a toothpick to see if ready.

Once cooked, let it cool down on a cake rack.

Chocolate icing (for cake or ginger bread men)

Fluff up 100g of soft unsalted butter.  When fluffy add 4 tablespoons of unsweetened cocoa, 1 table spoon plain vanilla essence, 1 cup of icing sugar and beat up till you get a consistency you are happy with.  Feel free to add some milk if the mixture is too thick.

Decorate cake with chocolate icing & enjoy!
